Our Sterling Vintner's Collection Cabernet Sauvignon displays tiers of briary blackberry, currant, spice, and chocolate from California's Central Coast. Soft floral and herbal nuances add complexity, and a year of aging in oak barrels added toasty vanilla spice.
Brimming with style and elegance, our Cabernet Sauvignon offers generous dark fruit and toasty spices. The nose is a heady mix of cedar, tobacco and oak spices over briary black fruits. In the mouth, flavors of dark cherry, ripe plum and mulberries unfold with supple ease, influenced by a small amount of Merlot, which fleshes out the mid-palate and lends lovely red tones. A lively acidity picks up on the back of the palate as the dark fruit flavors exit with a peppery finish. Pair this well-balanced, medium-bodied Cabernet Sauvignon with grilled meats or pasta.
I really enjoyed this Cabernet Sauvignon – but I am a little partial to Cabs. I enjoy a nice Cab – I think I’ve picked up the habit from a co-worker (who would probably beam if he read this, lol).
This Cabernet Sauvignon was a rich dark burgundy color that was simply beautiful. The flavor was very bold – rich and full with a bit of a tang and a hint of sweetness.
We didn’t finish the entire bottle so I tried a tip for second day drinking that I’d read somewhere: tightly re-cork the bottle and refrigerate the wine overnight. Give the wine a few hours to return to room temperature before drinking (and I ran it through my aerator). I was rather surprised by the additional sweetness the Cabernet Sauvignon showed on the second day! Normally 2nd day wine is a bit of a letdown for me but this was rather nice.
I can’t say for 100% certainty that I’ll purchase this wine again but it gave a very nice showing.
